Poutine, the haute cuisine of Canada, we have avoided so far. One has to get to Mexico, to a Gringo town (San Carlos) and find pleasure in it... Well, at least it is easy to chew and even savory.
Here is the Mexican version of it, with some boneless chicken wings, and y'all know why.
